Southwestern Pizza
1 10-inch 98% fat–free tortilla
½ cup shredded part-skim mozzarella cheese
½ cup finely chopped plum tomatoes
2 tablespoons minced pickled jalapeno slices
3 scallions (white part plus 1 inch of green), thinly sliced
¼ teaspoon crushed dried oregano
2 tablespoons chopped fresh basil
1 tablespoon grated Parmesan cheese
fat-free sour cream (optional)
Preheat the boiler.
Place the tortilla on a nonstick baking sheet. Top evenly with the mozzarella cheese, then sprinkle evenly with the remaining ingredients except the sour cream.
Broil 4 to 6 inches from the heat source until the cheese melts and the edge of the tortilla is crisp and lightly browned. Cut into wedges. Pass the sour cream (if using) to spoon on individual servings.
