Recipe: Homemade Muesli
Unlike granola, muesli grains are eaten uncooked, and most versions are very sweet. Our recipe is less sweet and quite tasty. Serve it with skim milk or mixed into plain yogurt.
If you like a "more cooked" flavor, you can toast the rolled oats in a single layer in a shallow baking dish in a 350 degree oven for fifteen to twenty minutes, shaking the pan often to ensure even toasting.
Ingredients
1/2 cup rolled oats (toasting optional)
1/4 cup rolled wheat (wheat flakes)
2 tablespoons oat bran
2 tablespoons wheat bran
2 tablespoons wheat germ
1 tablespoon golden raisins
1 tablespoon diced dried apricots
1 tablespoon sliced almonds
In a medium bowl, combine all the ingredients. Store in a tightly covered container until ready to use.
Makes 2 servings.
Per serving: 200 calories (17% calories from fat), 4g total fat (0.6 saturated fat), 8g protein, 38g carbohydrates, 7g dietary fiber, 0 cholesterol, 3mg sodium
